"Rashmalai" I love to rashmalai since my childhood. Its really very interesting to me. Cause, I am so foodie.😋
Today I made rashmalai. This is my favourite dessert item. And my friend Susi helped me to make Rasmalai. She came to visit our house. And her cooking hands are very good. So let's share with you how I made Rasmalai.
process:
At first I boiled 2 kg of fresh milk. Then i reduced the milk by boiling. When the milk fully boiled.
That time I was adding 2 table spoon of white vinegar. Just because of making chena or you can say also paneer. By the way it is very important part of the recipe. I love it most. It is very interesting part of this recipe.
When the chena was done. I left it to be cool for a while. After a while I brought a white, clean, fresh cloth to pour the chena. Then I was wrap the chena up to completely drained the extra milk.
After that I left this wrap for a while. After 2-3 hours i opened the chena in the cloth. At that time the chena was moist.
That time was very difficult. That was the time when i was smashed the chena very well. I was smashed it very roughly until I got the perfect and a smooth texture. When I was done to got the texture that time i made a lot of balls from the mixture which i made like this. I was cover it for a short time.
Then i was made sugar syrup for the ball. For the sugar syrup, I boiled 2 cup of water, and 1 cup of sugar. Then i was adding Cardamom for a nice fragrance. When the water was well boiled and melted it completely. I dropped the balls into the sugar syrup. Then i left it boiled for 2-3 minutes. After a while i left it to chil for 15 minutes.
Then i made main malai. For making malai, i took a pan and poured 1 kg milk, and also add 3-4 spoon of condensed milk. I left it boiled and then i was using a little pinch of Saffron for a nice colour. Then i was wait for a thick consistency. After 5-6 minutes I got the perfect consistency that i wanted to. Then that was a perfect time to pour the balls into that milk which i made.
After some minutes i was covered it and also cook for around 3-4 minutes untill the condensed milk mixture dissolves. i made my rashmalai.
Finally, for creat a delicious look, i was garnish my dessert by using some crushed almonds.😋
